Boston Day 3

First off, I’m sorry for my hiatus from posting for the last million years two weeks. Meghan has been holding down the fort while I’ve been trying to figure out my life – she has done a splendiferous job if I do say so myself. I won’t ask if any of you missed me. I know you didn’t.

Second of all, does it feel like my three day vacation to Boston has now lasted for well over a month? It does? Yeah, that’s because I’m lazy and can’t seem to tell you about my three day trip in the span of another three days. Posting three days in a row – what a concept! Apparently it’s a concept I don’t quite understand. Well, here’s to future improvements!

I’ll get started on that right now by finally telling you about the rest of my vacation to Boston last month. Ugh, I suck.

Just in case you’re in to some really intriguing reads, here’s what happened on my first and second day in Boston.

Sunday was a pretty lazy day, and we basically began the day the same way we ended Saturday: in our onesies – just in case you forgot. If you were actually hoping to forget, don’t click that link. Anyway, we had every intention of getting up and being somewhat productive, but who were we kidding? Instead, we finally rolled out of bed and decided to take a walk to a cute little bakery down the street from my man’s apartment: Rosie’s.

In keeping with the theme of this weekend, we over-indulged in some of the delicious treats that Rosie’s had to offer. I honestly don’t even remember what all we got. Really, I think we just closed our eyes and pointed. And behold.

I think a food coma ensued shortly after finishing the pastries and chai tea lattes we both ordered. By the way! My babe had never had a chai tea latte before. Poor guy was deprived for 24 whole years – I’m sorry sweetie 😦 Good thing you have me here to introduce you to all the finer things in life…Anyway, as we were leaving I’m pretty sure my only clear thought was “Rosie, will you marry me? And will your bakery cater our wedding??” Think that’s too much to ask of a new, fictitious fiancee? Me either.

Don’t worry about my guy being left out in all of that; I’m sure he probably wanted to marry Rosie, too, although I don’t think that’s legal…

We needed to walk off our diabetes, so we headed to the grocery store for some real food, you know, the kind with nutritional value. I will admit, we bought a few more cookies while we were there. Oops. We got good stuff too. And made a ton of food for dinner.

First up: Salmon & Asparagus topped smothered in cheese

Here’s how it went down.

He’s so cute when he cuts things. Haha, obviously this is a new relationship. I’m sure you guys know how I feel. Giddy comes to mind 🙂 Oh, and not to worry, he washed his hands.

Cheese?…Check.
Iceberg lettuce?…Check.
Bud Light?…Check.

Good. To. Go. Haha, not even remotely Paleo. But, it’s better than Chinese food for dinner, breakfast, and then dinner again. At least there’s that?

Next up: Turkey Basil Artichoke Meatballs (courtesy of Juli at PaleOMG)

Here are Juli’s directions for this super easy, super delicious snack:
Prep time:  10 mins
Cook time:  20 mins
Total time:  30 mins
Ingredients
  • 1 pound ground turkey
  • 1 (14 ounce) can of artichoke hearts, diced
  • ¼ yellow onion, finely diced
  • 4-5 tablespoons fresh basil, finely chopped
  • 1 teaspoon dried parsley
  • salt and pepper, to taste
  • 1 teaspoon fat of choice (I used bacon fat)
Instructions
  1. Preheat oven to 350 degrees.
  2. Place skillet over medium heat, add fat of choice, then add diced onions and artichoke hearts.
  3. Move artichoke hearts and onions around in the pan and cook until onions are translucent. Remove from heat and let cool.
  4. Once they are cooled, in a large bowl, mix together ground turkey, artichoke hearts and onions, and the rest of the ingredients. Mix well.
  5. Make 18 same sized meatballs. I used an ice cream scoop then shaped them with my hands. Duh.
  6. Place on a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes until cooked through.
  8. Eat up. With veggies. With meat sauce. With dipping sauce. With anything really. Your hands for gosh sakes.

Ok, ok, so we didn’t royally screw them up. They actually turned out really well. Unfortunately, we weren’t able to eat very many due to our sugar binge that occurred earlier, and by earlier I mean all day for the three days leading up to this one-time consumption of real food.

After we enjoyed this lovely meal, we had an equally pleasant time devouring even more cookies in our onesies – naturally. It was a perfect day: sugar, pajamas, and my babe. At least that sounds perfect to me. Sometimes I wish I could live in pajamas.
