Well that’s quite a mouthful! I’m off to a creative start already, clearly. And it’s about to get even more original considering these recipes came from another blog – PaleOmg. So if that blog link isn’t clear enough, both of these recipes are 100% Paleo and, again, 110% DELICIOUS!
Acorn Squash + Bacon Patties
1 acorn squash
2 tablespoons coconut flour
1 package bacon, cooked
2 tablespoons bacon fat from cooked bacon
salt & pepper, to taste
The acorn squash cooks in the oven after being split apart and seeded face down on 350 degrees for roughly 30-40 minutes, or until soft enough to scrape out of the rind. Mix everything together and make your little pancakes! I used olive oil on the pan to cook the patties and I think that always adds such a rich flavor and great texture.
Herb & Mustard Crusted Salmon
2 pieces of fileted salmon
salt & pepper to taste
2 tablespoons coconut flour (see a theme in tonight’s concoctions?)
Basically, this is the easiest salmon recipe I’ve made in quite some time. Take the salmon and massage the Dijon mustard and olive oil (your discretion when it comes to amounts – I loaded up on the mustard because it’s a flavor I love) into it and top it off with the parsley, coconut flour and salt & pepper mixture and throw it in the oven. Voila – perfect salmon!
I also made some roasted, shredded Brussels sprouts to enjoy on the side. Those just get tossed with salt, olive oil and pepper and thrown into an oven on parchment paper covered pan to bake for roughly 15-20 minutes on 350. Simple, satisfying and delicious. 🙂
All the flavors in this meal really made this dinner quite delicious and fun to eat – every bite was different and everything was simply, YUM.
