I know what I said before, but this isn’t really a game changer type of ‘recipe’. This is your basic salad – spinach, smoked salmon, roasted and shredded Brussels sprouts topped off with my homemade dressing.
And, lunch wouldn’t be complete without some sweetness – so carrots on the side:
Friday night began with some relaxing reading, snuggling and munching on some sun butter. Sun butter is a relatively new product to me, but it’s better than peanut butter! And, quite a bit more healthy, too.
After some relaxing on the couch, I went out with a group of friends, my fellow blogger included:
I may have drank a bit more than I intended… Whoops! When I awoke this morning, I was not prepared to tackle my planned 17 mile run on my agenda. In an effort to delay the inevitable, I made a stellar breakfast consisting of egg whites, sauteed mushrooms, spinach, salt and pepper.
It turned out great, and I added some Trader Joe’s spicy guacamole – that really took it to the next level!
Back to my run – I was feeling a little better after that wonderful breakfast and decided to get it together long enough to tackle my long run. It was a grueling three hours of uphill battles, no sidewalks and plenty of close calls with injuries, but it was a phenomenal run. I mean, come on, check out the weather I had today:
Not a cloud in the sky and the perfect temperature. I couldn’t have asked for a better way to knock out a long run. THANK YOU MOTHER NATURE because if it had been poor weather, I don’t think my run would have been as successful as it was.
And now I’m curled up on the couch recovering – that was an intense run! Happy Saturday folks! 🙂
